Ashford Castle appoints new Head Sommelier
ASHFORD Castle in Cong has appointed one of its longest-serving team members as Head Sommelier.
Nicholas Heneghan has already spent 28-year years working at the five-star luxury hotel, with his new appointment marking a significant milestone in his career.
The Mayo native joined the team in 1998 and spent his first six years in food and beverage service as Chef de Rang, while also working across room and lounge service.
He transitioned to the castle's renowned sommelier team 22 years ago, steadily progressing through the ranks. For more than 11 years he served as Assistant Head Sommelier before taking on the role of Head Sommelier.
A key figure in the development of Ashford Castle's world-class wine programme, Nicholas led the move to the estate's new wine cellars in 2015, where he curated and organised the collection.
Since then, he has overseen the management, purchasing and stocking of the cellar, ensuring an outstanding selection of more than 600 wines for guests.
“Having dedicated 28 years to Ashford Castle, this appointment is a wonderful recognition of Nicholas’ exceptional talent and passion for hospitality,” stated Niall Rochford, the Managing Director of the Ashford Castle estate.
“His journey from joining the team to leading our wine programme with Robert Bowe, our Wine Programme Manager, is a testament to both his expertise and his dedication to continuous learning and excellence.”
Throughout his career Nicholas has mentored and trained numerous sommeliers, many of whom have gone on to successful careers in leading hospitality establishments internationally.
He has also continued to expand his own expertise through WSET training and specialist masterclasses covering renowned wine regions including Bordeaux, Mosel and Champagne.
“At Ashford Castle we love to see our colleagues build long and rewarding careers and Nicholas is one of many who has worked at the castle for more than 25 years,” added Mr Rochford.
“His knowledge of wine and outstanding service standards makes him the perfect choice to lead our sommelier team."
